Column: Karen Wight - New positives from the chaos of 2020

I am more than ready to welcome in the new year and bid farewell to 2020 as I am sure everyone is. What a year of unbelievable challenges! But I do think we have risen to them and some positives have come out of this dreadful situation.

As I look back at the year on a personal level it all started with optimism. I began travelling to London to host baking workshops which was a real buzz.

I had a diary full of food festival events and was anticipating the travelling as part of that. I was looking forward to my relationship with the Caravan and Motorhome Club and had a great trip to France booked.

When we started with lockdown I was initially downcast. However, positives were there, I just needed to discover them. Like so many people I started to adapt, and change my perspective.

I became involved with our local Covid-19 group, baking and helping prepare meals to be delivered to our shielding community.

This became a wonderful focus, and I started to learn and develop in the kitchen. Then the company I work with in London, Bake with a Legend began to think and we started classes online, Zoom being the big new thing to keep everyone in touch.

This enabled me to lead classes with people from all over the globe! I did a few lovely things with the Caravan Club online too; a series of fun videos. So I see how many skills and experiences I have gathered, and chalk this up as something good.

I had the joy of welcoming a new baby grandson, Nicu, in January, a gorgeous brother for Silke, and we count our blessings that they are happy, healthy children. We had the sadness of losing Bob my stepdad in June, but were thankful for his long, experience-rich life.

So, all in all, we made it through. I thank you all for following my articles each week. I look forward to bringing more recipes and chat next year.
