Try a warming sausage cobbler as autumnal chill sets in

I had a smashing time away last week with my mam down in Abingdon. We managed to see both the girls before the rule of only six outdoors was reinstated.

My mam remains in our support bubble as she lives alone but it could be some time before we see the girls again, as they both live too far away to come for an outside get together.

This is sad news but at least we are all feeling well and can continue to stay in touch using technology until the situation improves.

I did have a highlight once I got home again. I was able to watch a YouTube video I made with the Caravan and Motorhome Club a couple of weeks ago. It was great fun to make and was just me and Matt Allwright having a zoom chat about what I got up to during lockdown.

Matt fronts Watchdog on telly plus he is on The One Show most weeks too. He is a member of the club, so we have plenty in common.

When I returned from my trip, I turned my attention to a few things that had cropped up while I was away. A friend had asked if I could share a recipe with him that he could put into a magazine he was working on.

He asked for something simple to prepare that would appeal to people of all ages.

I put my thinking cap on and asked myself what is an ingredient that almost everyone loves, and I came up with sausages.

With the weather now very autumnal and the landscape at its best with the leaves all changing colour, I decided a sausage cobbler would be a perfect choice.

A cobbler is sort of a cross between a stew and a pie. The cobbles are just a savoury scone and they look a real treat around the edge of the dish.

I wanted to match the pork sausages up with something fruity and as pork goes so well with apples, I used some cider in the dish along with the trinity of veg which are carrots, celery and onion. I found a couple of parsnips and a small leek in the fridge, so they went in too.

To make a lovely gravy I added mustard, honey and a splash of balsamic vinegar and bubbled it all up until it was thick.
