Wakefield’s Great British Bake Off star Karen Wright has been getting upto allsorts

A couple of weeks ago I had a Spanish theme to my recipe.

This week it’s all about Spanish again but with a twist! I mean the lovely black sweets, liquorice! We always called it Spanish when I was growing up. Apparently, the monks that settled in Pontefract were from Spain and they brought it with them.

This week it is the Pontefract Liquorice festival. Although I live in Wakefield now, I was brought up in Featherstone and went to Pontefract Girls High school. I lived and worked in Pontefract when I left school, so I feel equally at home there. I also love liquorice. When I was on The Great British Bake Off, I made sure to use both rhubarb and liquorice in my recipes - a taste from home!

This year, due to Covid-19, the festival is not taking place, however, Wakefield Council came up with the brilliant idea of a virtual festival. You can find it on the council’s website. There are lots of fun things to take part in everyday: on Thursday I will be on there with a video that I made showing off a recipe using liquorice. There are not that many recipes out there, so I sort of made one up. It is a no bake cheesecake, with hidden sweets inside.

In other news, I start my week away in the caravan. As the restrictions were eased a little, we can now have a bit more freedom to roam. I will be turning my attention once again to great things to cook on holiday, ideally outdoors. I love to barbecue, I find it really relaxing. We have a charcoal BBQ which is fabulous, and we also have a marvellous little gas one called a Cadac Safari Chef - this is really a quick way to get your meal on the table, it is also very portable so good for the beach too.

This week we are staying in Brighton. We love it down there and there are plenty of quiet areas to explore. We love to go inland a bit and enjoy the South Downs. I have packed my swimming costume - you never know, I may get brave and take a dip in the sea.
