Wakefield’s Great British Bake Off star Karen Wright gets cooking in her caravan

We are away in our caravan, first stop the Malvern Hills, only a couple of hours from home and so very beautiful.

We have been blessed with the best camping weather possible, if you like it sunny! The campsite is in the perfect spot to sit and look up at the magnificent scenery.

We spent the first day out and about visiting the birthplace of Elgar the composer. His music always features at the end of the Last Night of the Proms, the jaunty songs we all love, Pomp and Circumstance being my favourite. We also went to visit his grave, only a couple of miles away from here. That done we came back to the site and settled down to do a bit of nothing much, just relaxing. That’s one of the joys of a camping holiday, it is so flexible.

I had an online zoom cook along booked in too. Quite a challenge for me getting the technology to work without broadband and in the confines of a caravan. After a few hairy moments it all went well and we made a very zingy Thai pork meatball dish, not something I have ever tried before.

My friend Terry from the Great British Bake Off joined us for a couple of nights. He arrived in his motorhome and we decided to do a cooking video outside his van. We decided to find something local to make. We came up with a Malvern pudding, normally steamed but to save gas we baked it. We put our twist on it by baking a caramel sauce to pour over.

The pudding was very tasty and easy to make, well, we did it on a campsite, so it had to be. The ingredients were sugar, butter, SR flour, eggs, cinnamon and apples. Very autumnal, despite the summer sunshine.

We are visiting a patisserie today so I will tell you about that next week. We are heading south to near Portsmouth and I am already thinking what a local dish from Hampshire might be, any suggestions anyone?
